Keto Dinners with Chicken

As you’ll quickly find out, chicken can easily become a staple for you in the ketogenic diet. It’s relatively cheap and there are just so many different meals that you can do with it.

Don’t hesitate to buy a lot of chicken breasts, freeze them, and then take them out in portions when you need them.

If you’re a fan of Chinese food then you know exactly what sesame chicken is. However, the version you’re probably used to has almost infinitely more carbs in it.

Think about how you would typically have this meal. You have the breaded sesame chicken along with either a massive portion of noodles or rice and maybe a small side of vegetables.

You won’t be able to have this meal with any rice or noodles but if you’d like to add some sort of vegetable to it, feel free to do that.

Ingredients

Coating and Chicken

  • 1 egg
  • 1 tbsp arrowroot powder (or corn starch)
  • 1 lb chicken thighs (cut into bite sized pieces)
  • 1 tbsp toasted sesame seed oil
  • salt
  • pepper

Sesame Sauce

  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame seed oil
  • 2 tbsp Sukrin Gold
  • 1 tbsp vinegar
  • ginger
  • 1 clove garlic
  • 2 tbsp sesame seeds
  • 1/4 tsp xanthan gum

Instructions

  1. Combine egg with arrowroot powder or corn starch (whisk generously).
  2. Mix in chicken pieces and make sure to coat them all over.
  3. Heat up sesame seed oil and add chicken in a large sauce pan (be gentle when flipping the chicken so the breading doesn’t fall off).
  4. While chicken is cooking, combine all ingredients for the sesame sauce and whisk together.
  5. When the chicken is cooked through, add the sesame sauce and stir together.
  6. After sauce has thickened, you are done.
  7. Add the chicken to a side of broccoli if you want.
